with over 30 years now in catering having been a chef exec chef in some big companies , running a retsuarant of 36 covers on my own ,doing relief all over the country and ireland,working in new york france channel isles and around the carribean on liners thers not much that suprises me but dont get me wrong , im still suprised ,thats the joy of the job or life
The funniest thing ive noticed over these years is the changes in all the ways we choose to cook and present food and find it quite amusing that the latest fashion is to drag everting across the plate .
my goal now is the same as ever and that is to present and cook good food that people enjoy ,very simple
